The best thing about this recipe is that you can use fresh beets or, you can go to the grocery, buy a can of plain old beets and fancy them up! If you plan on doing that you can tweek the recipe some, use what ever vinegar you want, the acidity won’t mater. Just make the brine, add the spices and orange zest and boil your canned beets in it for 5 minutes then let them simmer for about 10 more.
